NATURALLY OCCURRING ANTIOXIDANTS IN VEGETABLES




1) Caratinoids – 

Class of phytonutrients found in the plant cells and other organism like  algae and bacteria , which helps the plant to absorb  light energy for the process of  photosynthesis . Talking about their role in human body they act as antioxidant deactivating free radicals , free radicals are the single oxygen  atoms which  damages the cells of our body and should to neutralised to keep our body healthy .These free radicals can cause diseases such as  cancer , asthma  and other syndromes .Human body can not synthasize its own caratinoids  hence caratinoids containing vegetables should be a part of our  diet . there are about 800 types of caratinoids but mainly we classify them into carotene and lycopene , here are list of vegetables providing these necessary pigments to our body.
  • Carotene –  eg- orange carrot , pumpkin , muskmelon , sweet potato , pea and beans , leafy vegetables
  • Lycopene – eg- tomato watermelon red carrot

2) Flavonoids – 

like carotinoids these are  also phytonutrients responsible for providing specific colour to the fruits and  vegetables . they are more then 6000 types . these are also very powerful antioxidants ,anti-inflammatory and  immune booster . mainly we classify flavonoids into 4 sub groups
  • Anthocyanin – associated with heart health , antioxdising properties and greatly helps with obesity and diabetes prevention eg-  eggplant , red cabbage , purple sweet potato, purple broccoli, purple radish , onion
  • Flavonols (quercetin) – highly antioxidising properties and disease prevention properties are associated with these compound containing vegetables eg -onion tomato , beans , broccoli , peppers ,lettuce
  • Flavones – antioxidising properties with delaying metabolism of drugs. eg- celery , peppers , spinach , tomato , eggplant ,garlic , onions
  • Isoflavinoids – these chemical acts like estrogens they may be beneficial in prevention of breast cancer  prostate cancer and etc  eg- soybean ,  soybean chickpea , broccoli , asparagus , okra

3 Indoles and isothiocyanates –  prevents various kinds of cancers such as lung cancer and coleorectal cancers

 example , crucifers , leafy vegetables


4 Glucosinolates

this compound is responsible for pungency in vegetables 

 eg -all crucifers( broccoli ,kale , cauliflower  , cabbage and etc )


5 Thiosulfides 

plays role in cell metabolism . 

eg -onion garlic , leek , chive , broccoli .

indoles isothiocyanates , glucosionolates and thiosulfides all together acts as powerful anti ageing and antioxidant and should be included in our daily diet .
